1. Soak
Soak grilling planks for optimal flavour infusion (15 mins will do). This also prevents the plank from catching fire.
1. Remove Skin
The skin prevents the delicious smokey flavours of the wood from getting inside the meat.
1. Grill
Grill on indirect heat with the grill covered. For more flavour place char one side on direct flame, flip and place meat on charred side.
